iTunes showed 12.1 for 5S briefly, I restarted iTunes while I backed up the phone to icloud, iTunes then showed 12.0.1 as current!

edit: Back to correctly showing 12.1 as currently available.

I recommend downloading the IPSW instead of going OTA if you're coming from iOS 12.1 B5.
