What they've added is an option to turn on low-power mode in the '20% Remaining' and '10% Remaining' pop-ups.
If I update to iOS 9 b1 on my 6, will it crash the Apple Watch (if still on 1.0.1, not updating to WatchOS 2)? Or have bugs (connection wise, notification push etc.)?

Any "Beta1" is probably not good for a daily device. Anyone will tell you that. Wait for Beta 3 or GM if you want to use it daily without bugs.
