So far, for me, it's the HSBC UK app, which throws you immediately out of the app, and Vinted; it doesn't let you purchase, just takes you through to the contact seller page. HELP!

The real reason is that loads of banking apps simply whitelist stable major releases only. Has nothing to do with debug mode, the app doesn‘t and wont care about running on a beta release if it doesn‘t use APIs that are broken and cause crashes.For people who don’t know, developer betas are usually running in so called “debug” mode what prevents some banking and authentication applications from running. You can ask more details from your banks application developer.
E.g. when Apps make certain calls, it will close/crash. My Spanish and Finnish banks directly say that their apps wont work on developer beta even if they updated them. Or those are limited to certain functions only.
This has been happening for years now.
