Well after waiting 54 days my iPad Pro has finally shipped and will arrive on Tuesday, the last day of my window. Hang in there everyone. They seem to be hitting their delivery windows still.

NEWS FLASH,... still waiting, 7/1/2021 so it should on its way according to the Apple crystal ball between today and the 16th. Arrrrrghhhh,... LOL I'm good though I have my M1 MBP, 11 IPad Pro, iPad Air, iPad, 2012 Mini, and my Xs MAx to keep me company Applewise anyway. And yes al of those iPAds have jobs, none of them sit.
NEWS FLASH #2 - my 12.9" M1 iPad Pro arrived on 7/7 I was out of town when it arrived.

Seeing extended ship times on multiple Apple products. Either sales are significantly outstripping forecasted sales, global part shortages are affecting Apple satisfying demand, or a combination of both(this one is my guess).

Ordered iPad Pro 11" on 28 June. Switched to Preparing to Ship 2 July. Shipped this morning, 3 July from China. UPS says delivery Wednesday, 7 July.
I did get the Pencil on the same order delivered very early on 30 June -- which I think is Apple's way of torturing you...

Yup, same here with the pencils. We gave up though and ended the wait; ordered from bestbuy and got the 12.9” iPPs in 2 days, a few weeks earlier than it would have probably arrived from Apple.

The unit spent about 2 days in customs (perhaps due to the weekend), but DHL delivery was swift.
So, the delivery still says the 7th, which I think might be an amazing feat. For the past three days it is listed as being in Chek Lap Kok, Hong Kong. This morning it popped up in Taoyuan, Taiwan. It needs to get to the North Carolina mountains by tomorrow.
Transporter technology must have come a long way…
(there does seem to be a discrepancy, Apple delivery says the 13th, UPS says the 7th, but on the other hand, UPS seems to be vying these days for US Postal Service level of reliability)

Final update:
Received my 11" iPad Pro today. Fired it up and it looks and works great. Super fast time getting here from China.
Now I'm having a cluster with Verizon trying to get the cellular enabled. They are having all sorts of system problems apparently. Got hung up on when they attempted to transfer me to second-level escalation.
Ordered "12.9 M1 ipad Pro silver cellular 256GB" with apple pencil, MKB and apple care plus on 15th June. iPad arriving tomorrow. So looking forward to my first iPad Pro after original iPad air some 7-8 years back.
I would be a light user with primary usecase to take notes with apple pencil and do online studies which involves watch tutorial videos. May be some games occasionally.
I tend to keep my devices for long time so I guess that is the reason I went for the above setup which covers keyboard usage, pencil usage, reasonable storage and cellular option so that I dont drain my iPhone battery.

12.9” 512gb. Ordered sometime early-mid June. Delivery showing July 13th, Tuesday. Still shows processing, no tracking yet. Affirm credit payment was credited back.
Whelp, my affirm payment/code got canceled/expired per Apple only charges when shipped. Was just sitting in processing this morning.
Ended up canceling it and going to Best Buy’s online route. Order today, shipped to house tomorrow. Already, showing shipped and tracking #. Yesh!! What a mess. Crazy how I’ve waited weeks for apples dumb lead times, but got on Best Buy’s website and was able to order right away. Even in-store pickup was for next week delivery, if I went that route. Anyway, can’t wait.

I would do the same as you have, but I've already taken advantage of Apple's Student Discount (and "free" AirPods). Pencil and AirPods arrived, but iPad Pro is still stuck in Processing.

I think its considerably improved.. ordered 12.9 128GB Wi-Fi (US) on August 2nd, with delivery estimate August 10-17. Delivered on August 11th.
I got mine on Tuesday this week. Seems like I got in just at the end of the long waiting queue and the wait is only 1.5 weeks ish now. Hope you’re enjoying your new device
I absolutely love it.. upgraded from 11 1st gen to 12.9 5th gen. Screen absolutely blows and usb-c/thunderbolt is a welcome add on. Still hope iPad OS gets better with time.
