If you order from AT&T's website, from my own experience in 2014, they ran out at 12:00:00:00:00:00:00:00. It felt like they never had any to offer with a launch date delivery. It seemed no one had a delivery date earlier than beginning of October. It's why I only order through Apple now.

I always order from Apple and they have never let me down. I have known people who have ordered from all the carriers and it seems to be hit or miss. I will only go through Apple.

Can't decide on Matte Black or Rose Gold. I currently have a Rose Gold 6S+, and I love the color, I also have a rose gold MacBook 12'' and rose gold Beats wireless headphones. Matte Black looks so nice though.

I'm debating the exact same thing as you. Rose gol everything except I don't have the Beats headphones but I have a rose gold Apple Watch. Matte black looks nice and I don't like the black bar around my screen with the rose gold. But then it would match up with everything else I have. Less than 2 hours to make up my mind..
