This is exactly why I bought my 10/16/1TB 14".

Because it's off the shelf. As you said, 8/14 is powerful enough but I need 1TB and without going to the 10 core its a custom build. And having had various custom builds before.... lead times... no replacement on shelves, etc. Never again.

I wanted 32 GB ideally, but again... with 1 TB not off the shelf (and I wasn't going to go paying for a max because I don't even do GPU work really). 16 is fine for my purposes... but 32 would have been just that little bit more comfortable :D
I will say that I did consider a 10 core / 1TB but I’m a cheap ass ?

If we follow the same logic as M1, the difference for GPU is around 12-16% depending on the workload. On the CPU front you won't notice any difference at all since it's a 6 P core + 2 E core cluster config.. You are more than fine for your setup and workflow!

Honestly like I said I only opted for 10+16 was because of the external displays, I got a 3440x1440 100hz + 4k60Hz display and I intend to use the internal laptop display as well
Do you think 10/16 is a good idea for driving a single external 5K display, sometimes with the 14” MBP open?

Do you think 32 GB is a good idea?

I got the 8/14/16GB/1TB 14". Yes, it was not off the shelf and took a whopping 6 weeks to come to me (ordered 11/26, from Adorama as it was $100 off there)! Didn't need the two extra cores but really wanted 1TB so that's why I ordered that model. An M1 Air probably would have sufficed for my computing needs but I wanted the larger 14" screen (and the SD/HDMI ports). I plan to keep this for a LONG time (kept my 2011 15" MBP for 10.5 years, though upgraded to 8gb ram and SSD along the way, and had to live without GPU for last 2 years).

That's GPU stuff, and trust me for the 4K one you'd want the full die. I tried the base model and my laptop would be a bit iffy...

Here is me connected to dual 4k monitors!
