What programs do you use? This is exactly what I do. 512 was good til now but I wqs using Apple Photos with icloud photos. Recently started using LR and shooting way more in RAW, not sure if 512 will be enough1TB because when traveling, I copy everything from my cameras (photos and videos) and edit them as I get time. The iPad also serves as an additional backup of photos/videos.

Not sure who you were referring to, but, in my case, I have at least three copies of my photos/videos when traveling. iPad is one of them, and, if time/bandwidth allows, I back up to cloud too.It’s not a good strategy to store all your data on a portable device. Having said that if you are a videographer you'll need the space. Else, once you are done with a project you archive the raw elements and use or distribute the output.
i did the same1TB because I wanted the 16 GB or memory and unbinned SOC— memory being the key consideration.
