I have been an apple products user since 2010, now I'm really tired of this and I feel disappointed.

Likewise. This feels like a bug that was just abandoned.

For research purposes, can you guys please list down what type of setup you have?

For example, I have an Apple M1 Pro with 2x ultrawide 3440x1440 external monitors connected directly to the laptop via USB-C and HDMI ports.

This issue doesn't go away for several years now. The only salvation I have is the AutoRaise app, which slightly mitigates the issue.

I just started having this issue after upgrading to Sequoia. The app I'm working in just completely "freezes" but if you click to the desktop or switch to another app and then back to the original app everything is ok. Very frustrating. It seems to be happening more frequently lately.
