If you buy an iPad with no headphone jack, how can you watch a movie on an airplane with a friend/husband/wife ? Now I’m using an adapter with the headphone jack where we connect our headphones. Does it exist something wireless?!?

Of course there are wireless options. For higher fidelity or technical usage you'll have to use the dongle/converter. I do miss the headphone jacks on iPhones and iPads, but luckily for my main use I use wireless and would not want anything else. Still out of principle this is really bad of Apple.

I've got a couple a headphones that use Lightening cables. Is there a USB-C adaptor for this?

There must be. Android phones that have no headphone jock and use USB-C definitely have dongles for that so such exists. It should be checked how they work with the iPad. In theory it should work.

Also I believe that there are dongles that allow you to charge your phone via USB-C and use headphone jack. Those are maybe worth checking too.

Yeah, even if with the iPhone it wasn't a big deal, I really use the headphone jack with the iPad. I really dislike this, but I guess it was inevitable ever since the iPhone 7 launched.

Buy 2 iPads and AirPods and synchronise pressing the play button together
 
I guess the question is why? Why on earth eliminate the headphone jack in an iPad for any reason other than to gouge your users?

They removed it on the iPhone to help with water resistance. That’s not the goal for the iPad so I also don’t understand why they removed it. Maybe they needed room for other things... who knows.
 
Splendid! Dongles to the people!

Now I cannot connect my iPad to a MIDI keyboard and monitor speakers at the same time without dongles.
That's why I am going to keep my 2017 iPad Pro. Apple ignores the need of input monitoring. It's a bad idea to have only one connector for both input and output channels.

Beg to differ, I run a Mac Pro with a Focusrite Clarett I/O off one TB2 interface, nets me enough I/O to record a band an monitor with speakers and headphones, USB-C has more than enough bandwidth for this to be easily achievable, get a USB-C hub, a decent I/O interface etc. etc. I can see the new iPad Pro finding solid use with musicians, DJ's and the like, older USB interfaces can be used with the various adaptor cables. Apple need to be up to speed with the drivers mind...

The convenience of a 1/8 jack socket is massively outweighed by the USB-C, and while I'll never use bluetooth headphones for recording (too latent) I don't see an issue with this omission. For casual use, I'll buy the dongle and stay with my Etymotic ER4s.

I do use iPad Pro for music practice and audio processing most of the time. I also use audio interface for desktop situation. I just don't want to have to remember to bring any, I mean any, dongles when I use iPad Pro as a music production tool.
