Using buzz launcher with buzz widgets. With buzz launcher, you can use gif s as icons as well. So the top, the hello kitty sometimes peak out of the tea cups. ♡

changing it up a bit for a simpler layout
Tried something different- this is so much fun customizing. Made my own icons, walls, and layout. I'm using buzz launcher and widget.

I'm using Nova launcher (dock turned off) and the widget is Chronus (very customize-able and different widgets to choose from)

what app is that "today screen"?
It's not an app, a Today screen is basically a home screen that shows what you have for that day e.g.
Calender events (Birthdays, Anniversarys, Meetings etc...)
Reminders
Tasks
Weather
News
Etc...
It's how Windows Mobile and Symbian phones used to be setup.
To this day, I simply cannot have a blank Home screen or a home screen full of app icons, my home screen has to show me a Summary of the days plans, news and weather, it helps me a hell of a lot at work as a quick glance at my phone after unlocking shows me everything I need to know, I also have my locks screen setup in this manner. It's just the way I like to setup my phones. My Home screen has to be informative, and not just be a wall of app icons, although I do understand why some set it up with app icons.
Here are bare examples of what they used to look like on the old platforms:
