Thank you very much for your help. I found and downloaded the 'illumine' theme from Cydia but some of my apps (LIVESTRONG, iHomework, WhitePages, Factbook, Fluent News, etc.) didn't have icons that changed with the theme. I'm still very new at the jailbreak thing...can you please explain how I can fix this? I'm not sure what "ssh" means or how to go about getting new icons for already existing ones. I really like this theme and it would be great if I could match all of my icons with a similar look. Thanks in advance!!
EDIT: I thought it was worth mentioning that I have a Mac (the vast majority of YouTube videos show this process done on a Windows PC). I'm not great with computer stuff, so I would appreciate it if someone can explain (step-by-step) how to do this in the easiest/most simple way.
Themes have icons to replace the default Apple icons.
If the theme maker didn't make an icon to replace the stock Apple icon, then it won't be replaced.
You can make your own, get an icon from another theme that you like or contact the theme author to see if he/she takes icon requests.
Use Google to find a step by step tutorial for whatever you are trying to do. iClarified.com has many, many tutorials

Another option you have is to go into the icon folder of that theme and find an app that sounds like it would have an icon close to what your unthemed app looks like and rename that icon. I did it with a few on the glasklart theme.
As far as the look, color and finish of the dock, it's part of the Aquoah theme. I have not seen it anywhere else.
That theme is using the "iPhone-3G theme" icons.
