Have Big Sur running on my 2012 Mac mini. It runs great even though it is not officially supported, better than Catalina did in my opinion.

How did you get Big Sur on an unsupported model? I tried dosdude1's Catalina on my 2011 Mac Mini and it was fine, but he doesn't have one for Big Sur.

I used the first approach mentioned there, the micropatcher. It worked well for me, in part since my machine has Metal support and needs minimal patching. The only thing that needs patching is WiFi support. With that done everything works like normal.
 
Here’s my two older machines. One older and other somewhat old, both still running strong.

Here's mine. I was hoping to replace it with the new 16" M1X MBP announced at WWDC, but ... I'll just have to be patient and wait for the eventual announcement.Screen Shot 2021-06-08 at 19.35.10.png
 
Just finished doing a clean install on my MacBook - briefly considered 10.5.8 but I just couldn't resist SL, it's always been so much smoother in my experience
