Not so much a "What are we eating today/tonight" post as much as a "what are we having for Christmas?"
My husband and I have a compromise… I like turkey for Christmas, free range, none of this mass market malarkey — him? Not so much… so we compromise. Every Christmas we do something different. Last year it was a humungous pork belly with crispy crackling, year before we did 4 ribs beef roast, year before that was Goose. I think I am well over due for a turkey.
Of course the deal is, whoever gets to choose, gets to cook. So me, being a lazy sod, have abrogated the choice the last years…
But on the side, where has this year gone? I'm still just getting into my stride and it is Halloween all over the shops. *sigh* It is true, you know, as you grow older time flies even faster. None of that staring dreamily out of the school window wondering why it is only February and still a whole year ahead… now? I just blink and I'm roasting potatoes for Bonfire Night.
It'll have to be a 2-4 person turkey most assuredly. And yes, they are getting more difficult to source.Any chance of getting a small free range turkey? I managed that one year. (With difficulty, I won't deny). Or, as my brother has done, he and his wife arranged with another couple to share an organic free range turkey, and have half each.
I've always thought turkey and ham too much, but the ham, by itself, (boiled for the stock first, - which is retained for cabbage if you want, or some sort of soup, then roasted with mustard, maple syrup, honey, cloves and organic brown sugar) served with roasted potatoes can be delicious.

Now, ham is one thing we do agree on: New Year means Roast and glazed Ham!
Edit: Now I have worked myself into a salivary lather at the thought.
Oh yes, we always end up having the Plum pudding next day — as you say when hungry again and fully appreciate its fruity boozy splendiferousness.And the thing with turkey is to keep it simple; I have found a small turkey, roast potatoes and - perhaps carrots and parsnips (Mother and brother like that) and a green salad can work very well. And yes, all the trimmings, organic cranberry sauce, strange enticing mustards, and so on.
Cheeses for after. With aged port. Plum pudding for the next day, when one is hungry again, and not stuffed full of food.
And agreed, that delicious roasted ham is better later in the week; it is a waste of such a delight (especially if one is only cooking for two to four people) - and a source of additional stress - to have it on Christmas Day; serve it as its own crowning glory separately (yes, New Year's), or in those dark, waning days at the end of the Old Year, and it is delicious.

I'll also add though that for me, Chestnut stuffing is non negotiable.
Baked separately in a cast iron enameled Le Creuset terrine dish… Yum.

You’re right. They are freeze dried.Freeze-dried. Not dehydrated. Dehydration would cause them to be leathery and darker. Freeze-drying preserves most of the flavor and nutrients.
Let me know where you bought them, though. I've been wanting to buy a freeze dryer for years.
