I have read that New Orleans has an amazing cuisine, and you have also satisfied my curiosity on one thing: I had never seen (although I have, of course, heard of, and long to taste it someday) what a gumbo looked like, and I must admit that I am intrigued and look forward to making its acquaintance if ever I do get to visit the US.
the food was amazing. had many great meals during our trip. also, gumbo done right is very satisfying. in fact, my daughter probably had gumbo at least 4 different times at different restaurants.

An aside: Would love a good gumbo recipe..
I will source one. I never use a recipe, but I will find one similar to what I would make. Can you get okra (a must) and andouille sausage (preferred) and gumbo file? Also, the roux is the most important thing. Takes patience to get it to the dark brown color without burning it.
Okra, yes, in Asian stores. Andouille sausage will be a bit harder to source (but I know people in the food trade whom I can ask). When I am next home on leave, I will try to hunt these down, or source these ingredients.
Gumbo file? I do not even know what this is - I'm afraid that you'll have to enlighten me.
Actually, I am writing from western Europe - John Bull's islands - and, while I have visited, and worked in three continents, the land mass of the Americas is not one of them. But I would love to try gumbo, and, if I ever do get to visit the US, New Orleans is a place I would like to see.

brined some bone in pork chops. all farmer's market. fresh peach and bourbon relish, sweet potato mash, sweet corn and heirloom cherry tomatoes with dill, buttermilk vinaigrette. crazy, but micro mustard greens made a nice contrast.
