Hey Lexs I'm still unsure as to what to do. I do not have the file en.Iproj but I did locate a folder named fr.Iproj. Am I suppose to rename that?
Also, can you guide me in removing the original time and date that is obstructing my lock screen?

Cydia get Clockhide and that will remove the Time and Date for you

You can change the wording to any color yo want it to be
Go to Private/Stylesheets/ and Edit mini.css you need to use Text Edit,TextWrangler or something similar WHEN you open the file up
scroll down to city and it looks like this

Where it has color: #silver;
Change it to #black;
The same applies to Temp and desc (which is weather conditions)
If you go to this web page http://sukumal.brinkster.net/meaploy/angel/color2.html
You will see a color chart instead of putting black you may want a different shade of black like #363636;
This will change the color for you

Try copying this to the folder when in itunes. I'm not too sure if it will work though. I've no idea how i got mine.

You can also send yourself an e-mail with the Apple symbol in the body, open it on your phone then copy and paste it in the folder name.
To make the Apple symbol, use Option+Shift+K.

The wallpaper is pretty common, you might find a bigger version with tineye.com
