Thanks, it's quite simple really. All you have to do is have the emoji keyboard enabled... Settings -> General -> Keyboard -> Keyboards -> Add New Keyboard... -> Emoji. Then when you edit the folder name just switch to the emoji keyboard and select whatever icon you'd like.
