Not a gamer, so getting the base 2012 and whacking the Crucial RAM upgrade kit in there. Should be more than fast enough for the work tasks and web browsing/streaming I mainly indulge in. Then replace my old faithful 2009 MBP with an MBA 11. Happy days.
 
Why not get the non server. It is 200 less.

It's still an option, but I'd rather have the most on-board storage I can without opening the case. By the time I buy another 1 TB drive with a kit to put in the 2nd drive I've already spent too much to even warrant messing with it. I'll put new RAM in myself and be done. I'm all for saving money, I put the Intel 320 in my MacBook Pro, but to me it's way more convenient to just buy the 2 TB setup. I'd rather not void my warranty either, this thing is going to be on 24-7 as a media machine.

Yeah I can't make up my mind about this. Thing is, my itunes is already 800GB, so whatever I do, I won't be able to fit itunes, iPhoto + movie collection onto 2TB. If I have to add externals anyway, I might as well stick to the standard 1tb.

It's better to have your music on an external anyway. It's more versatile and it's less hassle when you upgrade the computer. Plus you don't bog down your main hard drive.

I'd stick with the 1 TB and get externals if I were you. My iTunes library is about 1/8 of yours.
 
Base 2012 model

I am going to wait 2 weeks and buy the cheapest Mini from Mac Mall. For several reasons. Mac Mall won't have any in stock for 2 weeks, I won't have to pay the tax (about US$53) I would have to from Apple, 2 weeks should be long enough to see if the Minis have any issues.
For my use the new set up should be fine, lite gaming, surfing, TV, music, and some GarageBand stuff. I have the Mac wireless keyboard and mouse and a Samsung 32" HDTV with lots of inputs. This will be my first Mac in 10-12 years, looking forward to it.
I have 2 Win 7 Laptops and a low end desktop so the Mini is perfect for me to upgrade to. I will probably do 16 gig of ram and perhaps add an SSD down the road as they both are getting cheaper almost daily. I also have a 3 TB USB 3.0 external HHD that will work well with the Mini.
With the 2 upgrades I should be set for several years.
