@macquariumguy: Your trip to Croatia includes the Istrian peninsula in Croatia: I once spent some time in that peninsula observing an election, - I loved it, and promised myself a return visit - and I strongly recommend that you try to visit Pula, which has one of the finest - and perfectly constructed amphitheatres - it dates from the time of the Roman Republic - and is still, improbably, in perfect condition with flawless sight lines and exceptional acoustics.
Split and Dubrovnik (I observed elections in those regions as well), must be seen; spent several hours in Diocletian's Palace in Split if you can; in the company of two colleagues, from the Netherlands and from Germany, I even attended Mass in an old Roman temple in the grounds of Diocletian's Palace, which is now a Catholic Church - attending a service in a building that has had some sort of divine function for the best part of 1700 years is awesome.
Wow. Looks fantastic. Makes me want to go nowWe will have a car in Rovinj and I'm planning to take us on a day trip in a big circle with Pula at one end. There are a couple old towns on the interior that look to be worth visiting also.
Our hotel in Split advertises itself as being in the old palace, but we're only there two nights before boarding for our cruise.
The cruise looks to be very nice. It's a 40 passenger boat but looks as well equipped as one could ask.

@Scepticalscribe we are going to take in Kotor. Looks amazing. Really looking forward to sailing in right up the "fjord" (for want of a better word).
I have multiple trips planned this summer including a wedding in Cincinnati and a conference in San Antonio. But the big holiday is going to be a ten day steamboat ride down the Mississippi. We start in Memphis and end in Louisville. Blues and BBQ. I can't wait!

My mother had already been to every continent. I've been...around. We thought this sounded like something fun and different.
That sounds interesting. After doing a 2 week river cruise in Europe, which we really enjoyed, we are considering the Mississippi, but realize the scenery will be much different.

If - on their travels - anyone come across a gumbo - or jambalaya - recipe that is more or less authentic, interesting and tasty and recommended, (and not torture to prepare and cook - I am a greedy and contented cook, not a masochistic one) it shall be gratefully received by your humble scribe.
Honey, I'm in the dead center of gumbo country. I have a great recipe I'll send you this evening when I get home. The only part of gumbo that's grueling is making the roux. You need time and stamina, cause all you do is stir over low heat. Burn the roux, start all over.
How cool is that?
My grateful thanks to you - these are legendary dishes I would love to try.
We've already been to Arizona and California (Phoenix, LA and San Diego) in April, in June we'll go to Edinburgh, Scotland for a short trip, and in the fall we have planned a week in Tuscany (near Cortona as that is my favorite place in Tuscany by far). We might squeeze in a city trip to either New York or some city in Europe as well later this year, but not sure about that yet.
Red beans and rice has become one of my favorites, and is the easiest thing in the world.
Imho, which you are free to disagree with, Popeye's (fast food) has, besides outstanding fried chicken, among the best red beans and rice for purchase. I recently cooked up a pot of black beans and ham which was oh so good.
Popeye's is not bad for fast food. It's also outrageously expensive and filled with grease. Theirs were the first red beans and rice I ever had. Now I just make em myself.

Gumbo
Rue (oil and flour -2TBS each) until it’s dark brown
2 lbs shrimp
2 Cups chopped okra
1 T filet
2 chopped onions
2T oil
2T flour
1 can tomatoes
2 QT water
1 bay leaf
salt
3 pods garlic
red pepper or Tabasco
Okra and onion in oil
Add tomato when nearly cooked
Finally add water, garlic, bay, salt and pepper
