As you saw, MacOS 15 did continue Intel support, going back to the 2018 MBP's and Mini, as well as the 2017 iMac Pro. It also continues to support a pre-T2 machine (the 2019 iMac).

I just downloaded it and tested it on my M1 Pro MacBook Pro and it is indeed Intel. So I installed it on my iMac Pro to do taxes this year. I did my taxes on the Mac Studio last year. It runs so much faster on the iMac Pro than it does on the Mac Studio.
I suspect that Intuit will wait until the last year that macOS Intel is shipped for feature releases before releasing a native Apple Silicon port. I have no reason as to why as I think that it's just a build option in Xcode.
I think the last non-T2 Mac, the 2019 iMac may be dropped for the next MacOS in 2025. It will have been over 5 years since it was discontinued.
The discontinue date for the 2019 was August 20, 2020 so it was a short-lived model. The 2018 mini was sold until January 17, 2023, when the M2 mini launched. The M1 Studio was out by then so there was an option if you needed 64 GB of RAM and the M2 mini offered 24 for those that wanted more than 16 GB.
I'm definitely interested in what gets dropped in 2025 as I'd like to keep using my iMac Pro for another five years.
I am hopeful that the remaining T2 Macs get at least another year or two, particularly given the cost of the 2019 Mac Pro. I don't see a reason to drop the 2017 iMac T2 if the other T2 desktop machines are still supported.
I suspect you're right, but it's anyone's guess at this point (unless you work for Apple).
As far as I can tell, the Steam app is still not native. Some games might be, but in order to install and run them via the Steam app, you still need Rosetta2. Which is quite frankly ridiculous by now.
