SBaGen - Free - "free software (under the GNU General Public Licence) for Linux, Windows, DOS and Mac OS X, that generates binaural tones in real-time according to a 24-hour programmed sequence read from a file."

I-Doser was made with SBaGen. It is operated entirely through the terminal, with a startup file and a few other scripts included (as well as plenty of sequence .sbg files).
IceTV - Free/Commercial - Dashboard widget, a handy little (Australian) TV Guide, the free version only shows what is showing at the current time - but I don't see that as a very crippling removal of a feature. Works with eyeTV.
Caffeine - Free - Sits in the menubar, click to enable, click to disable. From what I gather similar to Insomnia. I use it when watching videos and I don't want the screen to dim, or the screensaver to kick in.

I only use it to tinker with Ubuntu Linux. And XP before I switched to using Bootcamp.
Mirage - Free - Spiritual successor to ClearDock. Removes the "dock" graphics from the dock and just leaves the icons. Looks very clean with a good desktop. Looks great with xBack.
xBack - Trial (14 Days) - Shows any screensaver as a desktop, preferences to turn off when in battery use and open at login. Looks great with the
Time Machine Screensaver
