Sounds rich, but delicious (although the spicy red cabbage - have you a recipe? - would probably cut the richness somewhat).

And do I espy some raw (red) sliced onion to accompany?
Yes, fresh red onion. Love it!

Recipe (roasted red cabbage):
Origin: Hungary.
Ingredients: red cabbage, red onion, fat, sugar, salt, vinegar, red wine.
Slice the cabbage, salt it. Smelt fat in a pan, add sugar and onion, caramelize it. Now add vinegar, water and the cabbage. Steam it and 5 mins before finishing put some red wine in it.

Agreed. I love fresh red onion, too, (And thinly sliced fresh young garlic, as well).

Many thanks; I had been looking around for a good recipe for red cabbage.

I heard a terrible story at the Asian Restaurant we eat at. There are usually 3 large fresh water fish tanks full of big fish. It really adds to the atmosphere. Today we went in and there were all itty bitty fish. I asked the waiter where did all the big fish go? He told me that the company who maintains the tanks, came in to clean them, put all the big fish in a large un-airated bucket and killed them! Unbelievable!! He had no idea of what reparations were made, but that makes me sad. The little new ones were $35 each. They look related to gold fish.

I made pressure cooked country style ribs for dinner last night. Sided with cooked spinach and au gratin potatoes. Tonight? Who knows? I'll have to see what I can find.

When living in the TC did you eat at the Mandarin Kitchen in Bloomington? We used to be a regular. They must have 8-10 tanks of fish in their entrance...but they were filled with dinner. In my opinion they have the best Peking Duck, Eel, and dim sum in the city...unfortunately too many people think the same so it’s usually crowded. :(

When living in the TC did you eat at the Mandarin Kitchen in Bloomington? We used to be a regular. They must have 8-10 tanks of fish in their entrance...but they were filled with dinner. In my opinion they have the best Peking Duck, Eel, and dim sum in the city...unfortunately too many people think the same so it’s usually crowded. :(
We lived in Apple Valley and then in Rosemount. Did not know about the Mandarin Kitchen. There used to be a Mongolian BBQ place we would eat at in Bloomington.

I am browning the (organic) mince, in batches, in an Italian (Lagostina) stainless steel sauté pan

The Le Mauviel casserole is currently playing host to several onions (diced, slowly sautéed, a carrot or two, diced, and slowly sautéed, and the best part of a head of garlic), all slowly caramelising.

Stock has been prepared in a jug. Tomatoes (organic) diced and chopped - freshly ground salt and freshly ground black pepper already added, sit in a side dish, and will be added when needed.

Ground cumin, ground coriander, cumin seeds, chillies, tomato puree, a tin of tomatoes, and two tins of red kidney beans, await their turn to be added. Salt, sugar and black pepper shall also be added in due course.

Two hours or so in a preheated oven.

Yap...we were practically neighbors. My step daughter went to Eastview. The Mandarin Kitchen is on Lyndale Ave S so it’s only a fifteen minute drive. I think it opened sometime during the end of the Qing Dynasty. I can’t believe you missed it. :)
