My Dad still uses the 3rd generation iPad that I purchased for him years ago. It was always an underpowered device, but it seems to be working fine for him at the moment. Perhaps that's because his needs are relatively light, and that he hasn't updated it in a very long time. I'll actually probably "borrow" it back from him at some point to trade in at an Apple Store for a new iPad. I think it's about time he got a replacement.

Lol, I upgraded my mom's iPad last year from iPad 3 to iPad Pro 9.7. The iPad 3 was still on iOS 6 and unfortunately, she couldn't use it for her banking apps anymore. My dad used to be anti-iPad. I gave him an iPad 4 which he never used so eventually gave it away to my cousin. Now, he ended up appropriating my mom's old iPad 3. Still considering if I should trade in the 3 and upgrade him to the new iPad. :p

Donate them to a retirement home or local school! Give the old people a quick class and let them be off and searching the webernets.

The iPad 2 is what we let my daughter use as even at 12 years of age she still drops everything.

I do this kind of thing too but I don't have any DIY skills like that TV guy! I took one of my old phones and it had a holder that mounted to the car windshield using a suction cup so I mounted that to my elliptical and it's a touch screen music device and I have it hooked up to the audio system so it works great for me if I'm working out. I really like the weather and news display idea I think that's great, I also like the picture idea, I was actually thinking of picking up a digital photo frame but why not just use an older iPad, load it up with pictures and let it just cycle through them and either wall mount or put on a kickstand on a table Another good one could be home automation. Load up a bunch of remote control apps like xfinity, hue, your TV and Blu Ray player and leave it around the couch as kind of a universal remote control, like a free Logitech remote or a backup. That may be what my current phone becomes, fingerprint security on a remote control lol a mans best friend!
