I disagree.
I sense the OP's problems are in the settings on his MacBook, and NOT in the ISP's router.
In a post above, the OP stated that after a reboot, he got MUCH better wifi performance, which then "dropped back" at a later time. I would check the more "esoteric" network/wifi settings, try disabling them, and keep WRITTEN notes as to what was done.

Personal experience:
I have Comcast 1gb service.
They provided a "residential gateway" (modem/router combo).

I had a first-release Linksys "Velop" 2-node mesh system which I had been using with my earlier ISP, so I plugged that in and used it for a while. It got reasonably good wifi speeds.

Then, I decided to test the wifi on the Comcast gateway.
And... it was noticeably FASTER. Up to 940 or so (wired) and over 600 (wifi).

I tried tinkering with the Velop settings as best as I could, but couldn't "equal" the performance of the Comcast gateway.

Result:
I shut down the Velop mesh system, and now I just use the Comcast-provided gateway wifi.
It works VERY well.

Others' mileage may vary.

any recommendations on modem and what specs to target?

The last modem I installed was an Arris Surfboard S33 modem. I’ve also installed the SB8200, though this was before the S33.

It’s hard to determine the specs for a router in your home. I am a huge fan of Asus for consumer routing hardware, but I don’t think they have WiFi 6E in a comparatively inexpensive 6E router(though 6E is expensive in quite a few places). I am not unhappy with the Orbi Pro’s WiFi capability(which I assume is the same as the regular Orbi), but it was imho overly complicated. I haven’t used the regular Orbi’s though.

I haven’t used the TP-Link Deco or anything from them. I cannot speak to them.

I have used Unifi, Amplifi, netgear Orbi Pro, Asus, and Cisco.
