A late 2009 iMac will run Sierra with no fiddling. An early 2009 will run it with a bit of hacking, and will run El Cap as-is and that should be fine -- certainly much later than Mavericks. The 2008 (and I think 2007) iMacs top out at Snow Leopard officially but I believe you can get them to El Cap with a bit of fiddling. Yes, please double check exactly what she has.

My early 2008 easily updated to El Capitan as long as Snow Leopard is installed. No "fiddling" required.
 
Needs. Her current iMac is 6 years old and can't install and run Adobe apps that she uses for work.

Heck even Google Chrome can't be updated anymore and can't even load up LinkedIn!

Well my iMac is 6 years old (mid-2011) and will run just about anything I care to install so that's rather odd.
