Before you set up your new phone make sure to unpair your watch from your old phone. Unpairing it will create a current backup. Once you get your new phone set up and working then pair your watch back to your new phone and it will restore from the last backup of the watch that it made when you unpaired it.
It's just a sheer amount of shipments and their statuses they have process. Unless they do something overnight, I would expect the same.
My Apple Watch Ultra doesn’t arrive until Next Friday. So I don’t know what I’m going to do without rocking a new Apple Watch. May have to rely on AW 7 until then?
UPS is massive, 2021 they delivered something like 25 million packages every day. iPhone launches are big, but in the grand scheme of things it’s business as usual. I don’t remember previous launches having scan delays this long. Who knows. ¯\_(ツ)_/¯

Sounds like a plan, just pair your 7 back to your phone for a week then unpair after you get your new baby and then pair the Ultra and it will restore your backup to the Ultra. You won't have to miss closing any rings then either.

where does it put that backup when you unpair it? is it on the 13 and I will need to do quick start? I was going to restore from my 3 days old 15.6 backup on finder on my MacBook but maybe this requires I do quick start to get the backup from the 13???
I'm probably on wave 1 or 2. I literally ordered the phone 1 minute after pre-orders went live and was charged almost immediately.
