A stock market widget could update its content frequently during open market hours, but not at all over the weekend." source
I noticed recently with a third party stock widget there was a major delay between what was shown in the widget and when I opened the app or checked Yahoo stock or my broker app to see it 'live'.
I also noticed that Carrot weather developer mentioned that the higher the subscription Tier the more a widget will be updated which probably also has to do with the fact of the costs he has to pay to all the third party weather sources since there are similar limitations in the app to change weather source per week.
