Ordered the 256GB Pacific Blue Pro Max from T-Mobile/Sprint late yesterday to replace my XS Max. UPS says it will deliver tomorrow (I was too late for overnight service). I live in Seattle.
I ordered 12 Pro Pacific Blue 256GB on 11/22 and it's still in processing. My expected delivery date is also 12/16 - 12/23. My card is still not charged yet. I'm getting kinda impatient at this point.
I originally planned to order mine after Christmas and hated waiting. Then the wife said just order it now and the 2-day order-to-delivery wait is intolerable! I too kept checking the on-line processing status. And I'm almost 70 years old! (That's it - at my age, I can't afford a lot of waiting for anything ...)
Well my 12 mini arrived, but it's case and screen protector still have not, meaning Amazon missed their delivery date and Apple's is still on track, just shipped out later despite ordering at the same time. Busy time of year I suppose. Rocking it naked today and likely tomorrow until it all arrives, hopefully won't damage it in two days time. But this iPhone 11 already has quite a few scratches on it already and it's new as of March of this year.
This is my first white iPhone since my iPhone 4S that I loved so dearly. Had to pass on the Product Salmon. Here it is on top of my work iPhone 11. Much prefer the mini size.
And for old times sake:
It is a little less bright white, more creamy/warmer color of white and the silver has a slight pinkish hue to it but not enough to bother me and certainly better than this years red and it seems every other phone I see up for re-sale is blue so that's a popular one this year. Digging the white myself.

Ordered a graphite iPhone 12 Pro Max 256GB on November 26 and my card was charged this morning. When I checked my order it had changed to preparing to ship. The estimated delivery dates are dec 22-31.
Update: 3 hrs after posted it shows as shipped with the delivery date of Dec 22. Fingers crossed no delays.

This seems odd to me. I ordered a graphite 12 PM 256 on the 1st December and my shipping window is 16 -23 Dec. That’s several days after yours but with an earlier window. Glad yours has shipped.
. Maybe on the 24th?I’m assuming apple had allotted a certain amount of graphite PM 256GB for this period. Your ordered after me but mine may have been one of the first in the batch and yours one of the last. Then shipped at the same time.
My delivery time could be later as it will touch down in the USA before continuing to Canada.

I’m thinking most updates from processing to shipping have been taking around 10 days recently for 12 PM. So hopefully I see an update by the 11th. Do people see status changes on weekends?
My friend had ordered Pro Max 128GB Pacific Blue on 11/22, and the status changed to shipped today early morning. It's coming via FedEx, this is the first time I have seen apple shipping to Canada with FedEx

Since no body replied, I was charged late last night and got the tracking number today afternoon and status changed to shipped. The Arrival time also changed to 15th December. Does anybody know how long does it take to activate the UPS tracking number? Right now UPS just says tracking id not found. I also have expedited delivery.. not sure if it makes a difference.
It should show up within the next 24 hours after it ships. Or sooner or before it ships. Usually for me when i order apple product and apple uses UPS for that item it says shipped but the tracking info doesnt get updated till later evening. I always notice it updates after 5 pm my time.

Ordered a PB Pro 12 on Nov 30 with a delivery estimate of Dec 18-29 to Canada. Hoping it ships on time...
Status also recently updated to preparing to ship 
The FedEx tracking for this show's its shipping from within Canada, Vaughan (ON) to be exact .. that's weird, there was no shipping or any notification about it coming from a factory!
Have you tried using the tracking number on other sites? Maybe it shipped earlier and swapped to FedEx in Canada?
Thank you! It was updated around 8:20 PM EST and interestingly, it looks like it is shipping within Canada. Maybe because of holiday deliveries.
