Uber will know exactly who the delivery driver is. The police will turn up with the video footage showing the deliver driver never came to the premises and thus request to see the driver and Uber will say the driver no longer works for them because they never showed up for work. The police will ask for the drivers address, go round to the address and either find it empty or others living in the property but saying the driver left in a hurry and they do not know where they went.Update:
Just spoke with landlord. He said Police called him at 5am and requested the footage. This is what slowed down the investigation, the Police are on night shift. That and the city I live in has a lot of crime.
The landlord called his head office and they said not to give the footage to anyone except the Police. Understandable. But I have no copy to show Apple. We sat in the rental office and watched 30 minutes around the time of delivery. The only people that were on camera were tenants that used their key fob to enter. Not one person used the buzzer to buzz anyone.
As I suspected, the driver stole the laptops. Police have the footage.

Doing a web search on the line 'uber drivers stealing packages' brings up hundreds of social media video's of people having recorded Uber drivers stealing packages.
It is a problem that companies need to be concerned about when wanting to use Uber as their courier of choice.
As a side note, now that video footage has been obtained, the OP should now contact their credit card company and explain to them that evidence of non delivery is now in the hands of the police, give them the crime report number and then ask the credit card company to issue a chargeback. With that video evidence the credit card company no longer need Apple's involvement.
If I was in your shoes, I would wait until the police investigation is over and it's all finished and then I would go to my local paper and tell them I have a good story for them in that the local Apple store is entrusting expensive packages to a courier company well known for not only allowing it's drivers to work illegally but well known for it's driver to steal packages and that when you complained to Apple they dismissed your complaint as 'The package was delivered so there is nothing we can do', because the people in your town/city need to know what is going on with regards Apple using Uber as one of it's couriers.Yes I can see this being the case. Apparently it's common for legit Ubereats/Doordash/Grubhub drivers to sell or rent their accounts to people who cant pass the background check.
I did do a chargeback last week and no word from Apple or the bank, yet. If Apple responds to it, yes I will supply the bank with the police report number.

Many people mention the signature but I dont think it's that important.

Uber is very cheap but they are not reliable. There are far to many horror stories of packages being stolen by Uber drivers. I have no doubt if Apple were to disclose that they use Uber for local deliveries, customers would not be buying products for local delivery because they would be worried expensive items will get stolen, which is why Apple will not disclose who their courier is for local deliveries.

What annoys me about this and I am sure the OP as well is that over $2,000 was spent and Apple is treating the OP with some contempt because according to Apple as soon as the package says 'Delivered' they wash their hands of it. The lack of customer support from Apple is an utter disgrace. $50 or even $100 people may understand Apple's behavior here but for $2,000!!!. The customer has at this present time lost their money and the macbooks and all Apple can do is say 'wait'. I would be expecting Apple to constantly update the OP with how their investigation is going by emails or text. To me it seems Apple does not care that the OP is out over $2,000.
In my opinion this whole saga should have happened two ways, 1) as soon as the OP reported to Apple that the macbooks had not actually be delivered and gave Apple all the information they required (police crime number for starters), Apple should have apologized on behalf of their courier and sent out two replacement macbooks within two days of the non-delivery being reported to Apple or 2) as soon as the OP reported to Apple that the macbooks had not actually be delivered and gave Apple all the information they required (police crime number for starters) within two days the OP should have seen a refund given back to their payment method.
I just think that because Apple is a trillion worth company, a customer losing $2,500 worth of goods means nothing to them.

If Apple thought I was truly trying to scam them wouldn't they want to pursue charges against me? I think it's illegal to pretend you didn't receive items. I know for a fact filing a false police report is a crime.
Express delivery ships from a warehouse, usually overnight, and uses a normal delivery service like FedEx. The OP used the courier delivery that comes directly from an Apple Store.I've been keeping up with thread and today I went to purchase a new Mac mini from the Apple Store online.
Apple now only offers "Express Delivery" in my location instead of shipping for the new Mac mini with Uber Eats not mentioned anywhere.
This is the first time I've never seen shipping as an option. It's either Express Delivery or Pickup or don't buy from us.
See, that is what I mean, it is an absolute disgrace. Not only have you lost over $2,500 in money but also the macbooks and all Apple can do is send you a message saying 'sorry there is nothing we can do'. Apple do not care that you have lost all that money. You've asked Apple to provide you with evidence that the package was signed for and you said Apple will not give you that evidence. There is probably an Apple case worker assign to this case, probably has a lot more cases to handle BUT still, if the person has been informed that CCTV footage is now available, all it would take is a simple phone call from this person to the police to ask if the uber driver can be seen in the CCTV footage and when the police confirm no the driver did not go to the address the Apple person should then immediately contact the OP to say they have received confirmation from the police that the macbooks were not delivered and as such two new replacements will be sent out via a different courier. What Apple do then is up to them because the issue would now be between Apple and Uber.Not much to update yet, no one has reached out to me, Apple or the police.
