Necro'ing this thread to reflect on how far we've come.
Because I love the headphone jack too much, I've been unable to get a new iPhone from Apple for the past 5 years now.
Sad times. At least the 1st Gen SE still has excellent performance for my needs on iOS 15.

Why don’t you buy a lighting to 3.5mm jack and keep it permanently on your headphones? What’s so special having a headphone jack on your device?

It is extremely inconvenient. Apple's iPhones are all-in-one, dongles destroy that unity. And what about when you need to charge the iPhone?

its an extra 8 cm length for your headphones cord. and you can use a MagSafe charger to charge and listen to music concurrently.

There are plenty of head/earphone options available with a lightning or USB-C connector. Why not use one of those if you have to use wired.

I agree that it isn't ideal. I'm a huge fan of the 3.5mm headphone jack on devices, and I've held out for quite a few years. As for being "extremely inconvenient" that's a subjective thing that differs by person. For me, it's a minor annoyance.

The dongles that are available these days are actually quite good and I have even found some good quality earbuds w/mic that use the lightning port (not those janky BT earbuds that get their power from the lightning port from places like Wish) for when I need one for phone calls.

Because if I used a lightning earphone, then it wouldn't be compatible with my non-lightning devices. Ditto for a USB-C earphone. Only the headphone jack is compatible with everything I own.
 
With the new iPhones and USB-C this becomes pretty much a non-issue. You can keep the Apple USB-C to headphone jack adapter on the headphones permanently and most devices can make use of it. It works on every smartphone, it works on my Macbooks, it works on the iPad, and I'd hazard the guess it would work on Windows out of the box. And that adapter has good audio quality and is also among the cheapest.

I fully agree that this topic is a nightmare when it comes to lightning. Good riddance lightning...

There is still the inconvenience with the charging, especially if you are on the go charging with a powerbank or waiting at an airport you won't have wireless charging. There is a workaround that's good enough for me, any modern tiny (GaN) 30W charger can charge any iPhone far enough in 20-30 minutes.

I am not drinking the kool aid saying it's good we no longer have a headphone jack, it's inconveniencing us for no good reason. It doesn't affect water resistance, that and all other manufacturer claims are just not true. But it's an inconvenience I can live with as long as it's USB-C and not lightning.

The headphone jack was still more compatible with everything. USB-C goes a long way to making things easier, agreed, but any speaker system would use a 3.5mm jack, I don't know many that have swapped to USB-C. Bluetooth I'm not a fan of.
Honestly I think that USB-D should use the 3.5mm jack size. USB-C and lightning allowed the plug to be either way; the 3.5mm jack allows 360 degree plug and play. It's the most convenient input jack.
