I ordered the Mac Mini M1 (stock 8GB memory, 256 GB SSD) on Nov 14, and it's estimated Express delivery to my doorstep in the PNW just north of Seattle is Nov 23-24. It's currently in the "processing" stage.
I had sat on the order over night Nov 13-14 and then place the order Nov 14th, and the delivery time jump from Nov 20th to the Nov 23-24th. So the over night pause cost me 3 to 4 days.

Mine was originally estimated to be delivered Nov 23-24, and has now moved from
Processing to
Preparing to Ship with a deliver date of Nov 19 (my wedding anniversary
). This was ironic, as I was getting ready to place the same order again, but to have it picked up at my local Apple Store on Nov 18, and as I went to cancel the earlier order it suddenly switched to
Preparing to Ship, and I was unable to Cancel it. No matter, it saves me a car trip, plus what's in a day during this lockdown.
BTW... I've seen a few images of the Mac mini M1 with its bottom black plate and inner perforated metal plate removed, and was absolutely amazed at all the empty space inside. It seems the inside is just the M1 board and a big ole fan enclosure. To me, there's enough space inside this mini to house 3x 15mm 2.5" spinners or 3 or 4 thin SATA SSDs.
I have to assume Apple did not want to resize or remanufacture a NEW Mac mini case for the smaller M1 components.... but who knows what their intentions are for expanding the Mac mini M1 in the future.
