I have already read the previous pages, SIP is obviously disabled because macOS Sierra is not natively supported on my computer (MBP 5,1).

I can install CAT beta but after reboot Mac freezes at apple boot logo, I can fix the boot freeze resetting pram and I have to reapply dosdue1's postpatch installation to fix grey (no hardware installed) wifi and bluetooth.
I have attached the logs file, if I restart, my mac will hang.
Actually, SIP can get re-enabled in various ways and your system could still boot. Typically it's the next change or update that breaks things.
You also didn't actually post your log file. You posted a screen capture from CAT.
Why exactly are you playing around with CAT anyways? Have you swapped out the Broadcom 4322 adapter in your MBP?
Pretty sure you only have BT 2.1, so I don't see the continuity / handoff features working for you.
Edit: Ok, so I went to Github - presumably you also have one of the USB adapters giving you BT 4.0.
I thought that CAT had issues with USB BT adapters though....
Did you disable the existing bluetooth adapter before you setup the USB adapter? (that could be part of the problem).
If you can find which modules are supporting the USB adapter, you could try grabbing the ones from an El Capitan installation and try patching them to your Sierra install.
But, seeing as how the problem was opened on Github back in October and remains unresolved, I'm guessing that was likely already tried....
