I boot into Recovery... delete the Apple volume group to get one disk...
Then I open terminal and run a dd command to write random bits over all the bites.. then I reinstall Mac OS...
Arguably not needed, but still possible to do.
 
Glad that they finally got around to posting an official instruction set, but I much prefer using Configurator 2 for reinstalling the internal SSD. Much easier, quicker and takes care of the firmware too (as long as you have another Mac laying around).

It's interesting that they put an "erase mac" facility into the recovery environment on the M1 and not only did they tell nobody about it but they now seem to have abondoned it in favour of DU -> erase volume group

They will probably add the same feature to DU soon.
