I know there’s a couple of different methods in using the Aeropress but which one are you using? Also, are you measuring the amount of coffee you use and what size grind? I’ve struggled in the past with my Aeropress it I know everyone raves about them so am interested in giving it another go. Any tips? Thanks.

I use the same settings on my grinder that I use for the espresso machine -- at the coarse end of the espresso settings, so still very fine, and I grind it for 7 seconds (and no, I haven't weighed it yet). These settings with my grinder work well for a single shot.
And I follow the instructions - put the coffee in, shake to level the grounds, pour the water in (hot, but not boiling), stir for about 10 seconds, put the plunger in and carefully and slowly push the plunger down till all the water has gone through.
At the moment I am experimenting with exactly how much water to use for that much coffee.
 
More details --
I weighed the amount of coffee my grinder produces with my normal settings, and it creates 10 grams of ground coffee.
I half fill a normal (i.e. not too big, not too small) coffee cup with milk and microwave that for 1 minute. That produces warm, but not hot, milk.
I put the 10 grams of grounds into the Aeropress and fill it to the 1 1/2 cup setting, plunging as normal.

I'm going to be overstocked with coffee for a few weeks.....yesterday brought the arrival of my usual purchase of coffee, but 2 of the 3 packages weren't what I'd ordered. I emailed and this morning I received a reply saying they're sending the missing items and that I can keep the 2 packages that were sent by mistake.

I may have to resort to making coffee based cocktails to help use up the supply while it's fresh!

This is very probably Christmas confusion; just before Christmas, a similar thing happened to me a number of years ago, when the wrong coffee order was delivered - and, to their credit, they were both pleasant and apologetic, the small coffee company (and I still order from them regularly) took the approach that yours did, namely, they told me to keep the coffee that had been sent in error, and, (when they re-opened after Christmas) sent me what should have been sent in the first place.
 
Enjoyed a coffee that is a blend of three different types of coffee from El Salvador (with organic hot milk).

However, that has meant that I am now out of coffee from El Salvador (I still have some from Ethiopia), and must give thought to placing an order.

The last few days I've been trying some coffee from Rwanda.

Something I notice is how coffee flavor can change as the temperature of the coffee changes. This one is quite nice when hot, but it loses something when it's just lukewarm. When it's gone to room temperature, I find I like it even more than when it's hot......but having tried it as iced coffee, again it's not at it's best.

The kick I get is very brief, and then I feel more tired then before. I wonder if it has something to do with meditation too? It has been quite intense during the pandemic.

Anyway, I enjoyed a good espresso today, but this robusta increased espresso beans will soon have to change sightly. It's a bit too dense after awhile...
I have another kilo of the Guatemalan beans, so I might mix these together, or something, and see if and how I respond to that ;)
It's good to make shifts...and changes. I don't really like being in patterns too long. But I've been having a lot same beans before this latest for quite a while now.

Ordered 2 different beans yesterday.
As I am drawn mostly to the South America territory beans at the moment; one bag from Mexico that sound exiting, and another mix from various South American countries + a touch of some Ethiopian beans in too.
But first I will see if my mixture with the Guatemalan beans and the Intenso beans will be good.
Mixed 4 / 1,5. Hope the formula will still be exiting, yet remove most of the robusta density.
When I now next will drink…
You never know in these pandemic transformating days. Intense things going on in my corner of the world. But perfect for sharpening the awareness ??‍♀️☕️??
