Did Watch or HomeOS builds change or was it just iOS and iPadOS?
I don’t think watchOS changed; I deleted the profile, reset (both hard and soft), and nothing appeared.

Nothing was showing up after deleting profile on HomePods so I reset my Home configuration (only two HomePods so not that tedious to set back up) and now it seems to be pulling this public version of 15.3; the ‘Pods were already on 15.3 RC.

Well, good to know this dialog is still there on MacOS 11.2. Hope to be able to, you know, select something here very soon!

I have not yet made up my mind if I want to jump yet but coming from 15.1.1 on a 12 Pro, the update is sitting at 972.5MB
