You sure you upgraded to the RC? Sounds like maybe not.
I’m sure I did, and for a change, I used the ipsw file. Unless there was a second RC. I removed the beta profile as soon as the RC was installed. I also had an issue where right after the RC was installed, my phone wouldn’t get past the getting started Screen and I had to restart. Not sure if that had anything to do with it.

Also the 15.1 public release didn’t show up on the OTA normally. Initially it would say my phone couldn’t connect to the server and crashed the settings app when I pressed try again. It did eventually show up under the ‘also available’ section. Very strange indeed.

Anyway, I’ve installed the public release and all’s well now!

There wasn’t a second RC (Only for the iPad mini 6, which is not the device that is the subject of discussion), and the public release today is the same build as the RC we got. This thread is testament to that. I removed the profile as soon as RC installed, and I’ve not had any prompt for a new build to be installed, ans just checked Software Update and says I’m up to date.

So, your scenario is very unusual.

One minor caveat — there was an iPadOS 15.1 "RC 2" build that only applied to the new iPad mini, but as with the RC build for all other devices, there was no new build posted for the public release ("RC 2" was the public release build).
AFAIK, unless I missed it, they weren’t on a iPad Mini, a only seen them mention a 12PM so that point is not relevant, which is why I didn’t say anything about it.

@Pro_the_legend the device in question definitely wasn’t the iPad mini 6, was it?
 
Just deleted my profile and no up date shows up… just says “iOS 15.1 iOS is up to date”

It is very unusual, not sure what caused it or what exactly happened, but it’s fine now.

No, it wasn’t an iPad mini. I was talking about a 12PM.

The conversation (as far back as I read, anyway) didn't mention a specific device, and I figured I'd mention the caveat in case anyone saw that post out of context — it read like there wasn't any second RC, not that there wasn't a second RC for a particular device. ?
I know I've seen the OP only mention a 12PM in this thread, so I was going on what they said, and they just reconfirmed as such. I've edited my post, so anyone reading out of context will see too.
 
Even if we get 15.2 b1 today, I think it will be one stage lower than the 15.1 public release. The beta 1 of 15.2 is likely to be not containing fixes introduced in RC after beta 4 of 15.1.
