Well they did that super fast. I literally just check 5 mins ago and it was "preparing to ship". Checked just now and it's "shipped". They probably have a button that marks everything "shipped" at once lol.

UPS still shows my 7+ Matte Black 256 g in Louisville, but the Apple site now shows it as "Shipped" (it has been preparing to ship for like four days!).

No, the times are Eastern time zone. So for me, since my flight to Vegas is scheduled at 0356, I should see movement in approximately 33 minutes. However, tracking may not reflect this movement; depends on whether every pallet is scanned and all the tracking is uploaded at the time of the scan.

This also assumes that UPS is actually flying the item directly to your address' assigned hub which may or may not be the case.

Has everyone been getting charged today? My phone is in Kentucky and I haven't had the final charge yet

According to the Barclaycard website (FYI, Apple has special 0% financing options for Apple products with them, as long as your Apple associated balance is paid within specified time constraints), my charge was posted on 9/12!

Mine says 0.5kg

I believe so -- I think the only requirement is that whoever signs for the package has to be a legal adult. I know my daughter signed for me on a delivery.
