I don't have 10.1 but I can confirm using the 2x Zoom in the normal camera app does NOT switch the lens. It uses the 28mm lens exclusively. You can test it with ProCam and literally just switch between them if you want.

As long as there's enough light, it will switch for sure.

Yep, telephoto lenses in general are not well suited to low light photography, so Apple just doesn't use it when the camera software determines that the quality would be worse than just digital zooming with the wide angle lens. Even the $350 telephoto lens I have for my Sony mirrorless camera stinks in low light compared to the kit and wide angle lenses.

As a general rule of thumb, you should really only use the 2x zoom when you are outdoors and the sun is out or you are indoors under bright lighting. If you are outdoors and the sun has already set or you are indoors in medium lighting or less, just stick to the wide angle lens.

The flower looks beautiful and incredibly vibrant here but the bokeh effect appears artificial.

Yeah you can see a slight halo around the flower when you zoom in. I'm excited for this feature but I'm going to wait for next year's phone to get the Plus model.

The bokeh is present, however, the "portrait" mode is the new "bokeh" mode, correct? I don't have that yet since I am not on the beta 10.1 but I am looking forward to using it.

Yeah. It looks fine to me. I think people are just seeing bokeh and thinking it's not a natural thing at this point lol.

This is an image from my D810 with a 50mm 1.8g lens.

You can tell it's actually pretty similar to your flower. With the exception that stuff in the background is further away.

Not a great photo by any means, I was just testing out some features. This was shot in procam 4 with the 56mm lens at 1/5s, 32 ISO. I am pretty surprised at the level of detail and lack of noise in this image. Tripod is a must for this.

Here is another. The wind was blowing and it was really sunny but it's an ok photo. I think people can have a tendency to expect way too much from a phone. I mean just think about cameras on phones 5 years ago....nothing compared to where we are now and it's only going to get better. I imagine one day there will be a phone that is probably equal to or better than my D810.
