I don't know how long did it took him to make this video, which, by the click-bait structure, must be his living, but it would've taken less time to learn how to do it properly in 2-steps instead of 20.
By the way, in open OS's like MacOS or Windows -let's not even mention Linux-, what he's trying to do can take just as many steps if you don't know your way around. If you don't have Word installed a docx file won't open either in Windows or MacOS, signing a PDF can be as much pain if you don't know hot to do it in Windows (is it even possible out of the box?) or how to use the Preview singing capability of MacOS.
It seems he just doesn't want to learn the iOS way of doing things, and makes it look like pure frustration. For the new generations that are growing with iOS devices or ChromeOS devices as their main computing platforms, their first time with a Windows or MacOS desktop experience can pretty much look the same.
He has a few points of course, like how File and Photos compete in the share sheet and it's not always clear where a downloaded image has gone, but you learn that once and that's it.
