Okay, here's a stupid little thing...

The icon for the "Sound" menu extra now changes based on what your default sound output device is set to. Side-effect? On my Mac mini with speakers plugged in and the output set to "headphone jack," I now see a stupid headphone icon instead of the standard sound / speaker icon and can't tell at a glance what the volume is set to. Changing to a different output device restores the previous and expected volume icon. Dumb. I get what you're trying to do here Apple, but not every "headphone jack" is plugged in to headphones, and I'm willing to bet people who have that menu extra want to see the current volume level.

Edit: Omg okay. This just got even stupider. I connected my Beats for the first time to Big Sur. My stupid headphone icon reverts to the old volume icon with Beats connected! So to summarize: speakers plugged in to the mini jack = headphone icon with no volume indicator. Headphones connected via Bluetooth = speaker icon with volume indicator.

WT actual F is this?! I've never felt compelled to submit something in Feedback Assistant, but I just did...

1st world problem.

Check off "Reduce Transparency" in the Accessibility>Display prefs and your issue goes away completely.
It’s actually a bug, I’ve experienced it too.

Depending on ‘how’ you switch between spaces and activate/deactivate app windows, the menu bar will randomly switch between dark and light modes.

I have the latest version of macOS Big Sur, why I can't see 4K on YouTube on Safari? Click it on a 4K YouTube on Safari and it shows me only 1080p max.

I played this video on my intel Air in Firefox and "stats for nerds" (right-click on the video) implies it's running at the 4K resolution once I selected it.

Just tested Safari (don't usually use it) and after selecting the top resolution I had the same success. I had to press "Cmd -" a couple of times to get the viewport resolution to match the incoming (current) resolution. The dropped frames happened when playing around with the resolution.

Very Strange, I have only 1080p on all 4K YouTube Videos.

Yes, all 4K video are at max 1080p
No idea. I even changed my region to Romania (adding &gl=RO to the URL) to see if Youtube was somehow limiting bandwidth there and I got the same options.

I have a 13" MBA with the resolution set to Scaled: More Space (1680x1050). No idea if that has an impact.

I have got this working with the following steps:

Seems that only older macs have this issue, my mac is MacBook Pro 15" 2016 TouchBar.
  • Enable Developer menu in Safari Settings (bottom of Advanced settings tab)
  • In the newly enabled Develop menu, scroll down to Experimental Features
  • Enable VP9 SW decoder on battery
  • Make sure the VP9 decoder below is enabled (should be already)
It should now work! If not, restart the browser.

I suspect newer Macs have hardware decoding available for VP9. Mine is a Late 2013 MBPr and I had to choose the VP9 software decoding on battery option, even though it didn't offer the 4K option when plugged into power.

Hope this helps!

Your assumption is correct. Full HW VP9 decode is only available after Kaby Lake powered Mac devices with integrated GPUs (2017 Macbook Pro and later for example). It was hybrid VP9 decoder for Broadwell (2015 Macbooks) and Skylake (2016 Macbooks) but I'm not sure if Apple uses hybrid decoding in their implementation.
