Then prepared the Windows EFI all successfully.
I'm a bit confused. Considering your Windows partition is just one of the partitions of a single GPT disk where your macOS resides, how is your "Windows EFI" any different from your normal EFI? Or are you using a blessed OpenCore EFI volume located elsewhere? As far as I can see, if your OpenCore EFI volume is on your macOS disk, then it should also be the same EFI volume from which you want Windows to boot. I suppose that would be possible; if so, your single EFI volume should contain an EFI folder (blessed for OpenCore booting), which ought to contain two OpenCore subfolders (BOOT and OC), plus a Microsoft subfolder that should allow OpenCore to boot into Windows.

Here is how things are organized currently:
2TB SSD (GUID) -- PCe card

-- Microsoft

If I understand your comment correctly, I need to move the Microsoft Folder from Partition 1 to the MacOS EFI folder on the 2TB SSD. Changing the organization to look like this instead:

2TB SSD (GUID) -- PCe card
-- Mac OS Monterey
-- Mac OS EFI
-- Boot
-- OC
-- Microsoft
2TB Hard Drive (GUID) -- Bay 1
-- Partition 1 (ExFat)
-- Windows 10
-- Windows EFI

1TB SSD (GUID) -- Bay 2

No, I didn’t mean that. I’d interpreted your macOS and Windows resided on the same GPT disk, which I assumed was your OpenCore booting device. If that isn’t the case, ignore my comment above.

Got it. Okay so then returning to my current installation--conceptually is it correct? and if so thoughts on why I can't even get to the windows splash screen--when selecting the Windows boot option in the picker?

Do you mean you can't boot from the USB flash drive to do the Windows install?

I was using Martin's Package 0.7.5 and was not able to boot from USB stick. I had to revert back to Martin's Package 0.7.3 (V2) to be able to boot from the flash drive.
Yes I had manually to add ExFatDxeLegacy.efi... but 0.7.5 would not boot the stick whatsoever.
I'm all good and Windows is installed, and I'm back at 0.7.5 after windows was installed with 0.7.3 (V2).
 
Following the directions on post #1 for Windows installation and using Martin's package (0.7.5) for OC:
Boot the installer -- can do
Identify your disks -- done
Reformat your Windows disk -- done
Proceed with the installation -- done
Prepare your Windows EFI -- done
Finish the installation
➊ Reboot and use the OpenCore boot menu to select "Windows". --
done

After selecting Windows in the picker, however I am presented with a slightly backlight screen and so I don't think I get into the next step: "The configuration process will begin and eventually your Mac will restart."

This happens when Windows is unable to find it's .efi files in their respective locations.
 
Ok, if I followed the guide to the T and I've organized as noted a few posts back....where did I go wrong?

Now my Questions:
How can I check which OpenCore Version I currently have? (Didn't found it under "Maintenance")
Can I update to Monterey directly without updating to newest version from OC?
Is it possible to update from an older version to the newest without installing the updates in between?
Is there any "Sub-Thread" only explaining the steps to update?

Would be really awesome, if some has the time to respond to my questions.

The new OC versions are there for a reason. Your computer will not even boot Big Sur nor Monterey with OC from 18 months ago.

I have just upgraded from Catalina to Big Sur on one of my MacPros. I found that the best way of doing this is to start from scratch and follow post #1 like this is first time you do this.

I recommend you ask in the OCLP discord or the OCLP thread - OCLP and other OpenCore Packages/Managers.

You are much more likely to get help there as this thread focuses on a more "manual" approach to OpenCore as outlined in post #1.

It would also be best to focus your question there rather than ask in multiple threads.

Well, what a coincidence, I can tell you this morning I did just that. Always Catalina, about two years. No big Sur. I just installed Monterey in an SSD via OCLP 0.3.1. Then used Migration Assistant. Been using it some hours and when I saw everything was working fine, cloned it to the NVMe.

So happy. Everything works like a charm.

The installation was difficult but now it's ok, Monterey is installed on my hard drive overwriting Mojave. I installed Monterey on a Macpro 4.1/5.1 As I used a Geforce GT 120 card to have the boot screen for the installation.I would now like to put back the Radeon RX 580 8GB sapphire that I use with Mojave.With the Radeon, I have of course no boot screen...After booting up, I have the display with the white apple on black background, the progress bar that stops at the third, then nice black screens...Do you know how to fix this problem Thank you for your help

I just did a new installation of Monterey, this time I deleted the hard drive.os x is well installed, I removed the Geforce GT120 card just before the last post install.Then I put the radeon RX 580.This time I didn't install the post install for the macpro 5,1.I'm still blocked like before.No display.
I start, then I have the apple on black background, the progress bar, then a screen on but black.The screen has well video, but no display.I made a reset Param/NVRAM, and reset SMC...nothing changes


ps:monterey works very well on the Macpro with the Geforce GT 120 card, I don't understand why it refuses to work with the Raeon RX 580...

I'm trying to install OC 0.7.5 on cMP 5,1 using the instructions from post 1. However, after I reboot in recovery, the OC EFI partition is not listed with terminal command "diskutil list." Only my Mojave boot EFI is listed. Any advice? Thanks!

Is it expected that after installing OC using the instructions from the first post that I don’t see a boot menu using my Nvidia 1080?
 
I’m just talking about the OC boot menu before booting into an OS. I’m only planning to use High Sierra and Windows 10 and want to boot from NVME.

I am encountering a really weird issue and i'm trying to determine where it's Catalina or OC, so first posting here to see if anyone else has gotten it with OpenCore, and if not then I will check in the Catalina subforum:

When I put my cMP to sleep (i.e. at night when I am actually falling asleep), after a while of being in sleep-mode, my machine just randomly reboots (and I assume it has a KP or some sort of crash that triggers it?).

Energy saver looks like this:

Google search shows that this was a common occurrence on MBP's, but since this is NOT an MBP, there is no "powernap" for me to disable within energy saver, so those threads are pointless.

I'm not sure what to look for in Console, so still researching that front, but just wanted to ask if anyone else has encountered anything like this on their cMP running OC?

I have a feeling it's related more to the OS, but just want to be sure if there is something in my config.plist that could be causing it? (I doubt it since I'm using Martin's pacakge)

Did you check the BR2032 RTC battery voltage? It's the first thing to check with sleep problems.
