Hierarchical Dock (for project folders access)
Change Dock (from LeopardDocks.com - but back up the original files first)
Mac The Ripper
HandBrake
Soundtrack Extractor
Audio Hijack Pro
Senuti (for ripping iPod content)

I just started using Skitch a few days ago - very nifty..

finally got it right. i actually had to darken the my wallpaper behind the dock to see the words on it. i might mod the icons so that the words are a different color. maybe over the weekend.
