JamesC, it looks like you are looking at your order via the US Apple Store (which says "Ships by:") rather than the UK store (www.apple.com/uk/store) which says "Estimated shipping:". If you view the order via the UK store, the engraving and gift message options should no longer be greyed out. (My 'Add a gift message' option is greyed out when viewed via the US store but not via the UK store.)
For the record, my order for a 16G-ZOO was placed Sep 5, 2007 at 07:27PM GMT (12:27 PM PDT) i.e. as soon as the UK store was back up!, but it still says:
"Not yet shipped"

To be honest, if at 10am next Tuesday a UK 3G iPhone is announced with sensible pricing and shipping before Xmas I will cancel the iPod touch order and get the iPhone instead... but I suspect the first UK iPhones won't be 3G, in which case I will stick with the touch until a 3G iPhone is released.
MeWhOeLsE, thats odd... I can still 'Add a gift message' via the UK site. Do you still have the option to cancel the order? As I understand it, the option to cancel via the web disappears once they have boxed up your order ready to dispatch, so that might be a more reliable indicator of progress.
I can cancel it... but something (even something tiny) must have happened for us to no longer be able to personalise it anymore... (I'm grasping at straws here! lol)

Out of interest, what's my position as a consumer if my Touch arrives via my online order (assuming I don't cancel it!) and it has that outrageously bad 'negative blacks', over-contrasty display problem and I want a replacement?
Do I have to return it via mail to an Apple depot, or can I take it into an Apple Store (in Regent Street, for example) and ask for a replacement?
