Assuming security updates will still be released on 14, what are everyone's thoughts on moving up to 15? I was thinking to do so a day or so before 16 is released.

Apple removed 14.8.1 from the update screen with the release of 15.2. This either means it's obsolete and they pulled it in preparation of a more secure 14 release or they're done offering iOS 14 updates altogether.
They have little motivation to keep 14 updates going since 15 is supported on every 14 compatible device. Next year there's a decent chance that some devices may stop at iOS 15 so there may be an incentive for a longer support period.
I’m not positive of the accuracy here but it seems to make sense given Apple hasn’t officially acknowledged this (I don’t think).

Since I have an important app on my phone that still causes serious trouble when updating to 15.x I planned to stay on 14.x as long as possible. But as a week has passed since the release of 15.2 with no sign of an update for 14.x I think I will install 15.2 in the coming days.
But I am really disappointed, I would have expected Apple to tell whether iOS 14.8.1 is affected by the security problems or not and whether they plan to patch them or not. Same thing applies for iOS 12.5.5.

What about security patches? There seem to be quiet a few in 15.2. And as long as Apple does not declare whether 14.8.1 (and 12.5.5) are also affected by the vulnerabilities or not, this is my reason. Aside from stopped security updates (and a fresh design perhaps) I had little reason for major updates in the past few years.
The Apple website simply states: If you're using iOS or iPadOS 14.5 or later, you might now see the option to choose between two software update versions. This option allows you to choose between updating to the latest version of iOS or iPadOS 15 as soon as it's released, or continuing on iOS or iPadOS 14 while still getting important security updates for a period of time.
They certainly haven't made that clear.

Does not seem to be the case. We have some devices that are on 14.8. Software update is only offering to download 15.2. iPhone Xs iOS 14.8.1 > iOS 15.2.1 update shows up as the only update. Very strange behavior by Apple not revealing useful information in any kind of statement. Disappointing events.
