I wouldn't get too excited yet. Issue with HDMI is that it's digital thus cannot carry analog signal which e.g. VGA uses. Having both, HDMI and MDP would be extremely cool and definitely the best option.

Seeing as Apple has gone to the effort of completely redesigning the Mini, they have to update the low end iMac sometime soon. I mean, how hard is it to whack in a 320m? I might just get a higher end 21.5" now, really cba to wait any longer :/
With this new mac mini refresh. I think ill hold out for the new imac now just incase. I REALLY want one, but with the possiblity of HDMI port and maybe a slight redesign (even though they only did that last year), might outweight my needs and wants.
It didn't happen today. It will probably happen in a month once the return policy on my new 27" iMac has expired.
Those two have been "priorities" for a long time now. I think we should skip all the talk about what "has" to be updated before.mac pro and macbook air are PRIORITY. they should most likely see refreshes. imac not so soon ):

Probably iPhone 4 related... I doubt apple would announce the mini and then a few hours later, something else...
I can't even get to the US store.. There have been issues with the store whole day so just wait. It's unlikely that there'll be more updates
what would be intresting if apple introduces a similar concept of glass which is on the iphone 4 for future imacs

I hope so. Already peeved I cant get a white iPhone. Now i definatly aint rushing to buy an iMac now without a refresh.
I'm really stuck, should I just bite the bullet and buy now or not and wait for the update. I'm looking at the 27" with i7 so any updates should be minimal but I just don't want to buy now to find out in a few weeks or a month say that's it's been updated. I want it so bad! arrghhh! =p

My wife said I can get whatever I want, but it cannot go over $2000. This includes apple care.
The refurb i7 is $1849 - So after applecare that is $2018. Deal Breaker
The only reason for me to get the 27inch is the quad core. I really don't need that large of a display.
What should I get???

You might be able to find buy Applecare for less money on Amazon.com. In addition, you have up to a year to buy Applecare so you can hold off on purchasing it and still meet the $2000 limit.
I'm also looking at the same situation with my wife but since since will be going back to school I can feel like able to justify our purchase. We'll be buying the 27 inch screen iMac after seeing its beauty shine at the local Apple Store.
I'm also on the fence in terms of waiting for a refreshed iMac line-looking at a refurbished i7 though.
