I had the Stainless Steel model from Series 0 up until I bought the Series 4 Aluminum. For the abuse that Stainless Steel watch had seen, not a dent or a nick on that thing. I love the aluminum for its lightness but I definitely think the Stainless with the Saphire Glass can take more abuse.

Have you seen the YouTube presentations questioning the purity of the Stainless models? Apparently, on the molecular level, the Apple Stainless Steel has more impurities, along with the "Sapphire" glass. Not saying they're true, but they do make interesting points.
I haven’t seen that I must admit. I’m sure it’s plenty durable enough for the job though. I’d love to get hold of a couple of casings to get our labs to test. I know the aluminium is spec’d by Apple and would be interesting to see how it compares. I thought the stainless was 316?
