iOS bugs aside, the 11 Pro Max camera system is a huge step up from even the XS Max et al.
With the afternoon off, I went with my wife and son to a local farm to test the 3x lenses out and they're incredible. A few samples below which have had some tweaks to cropping, healing etc in Snapseed:

The ultra-wide lens is great fun due to its distortion and ability to get really close to objects/subjects or into tight spaces. Worked really well with the farm animals, literally offering a different perspective. The lens is a little soft at the edges, is prone to lens flare and is not great for shooting people due to its distortion. An excellent addition.
The telephoto is leagues better than before. Lets in more light to be faster when hand held or shoot in darker situations without night mode. Definitely sharper than before, where portrait mode photos tended to look soft even in the eyes and other facial features which iOS is supposed to keep sharp. An excellent upgrade.
Finally, the regular wide lens. The unsung hero because it's simply always been there, but this is probably the most noticeable lens upgrade of the bunch. Much sharper than before, feels like it lets in a little more light than before, and the image stabilisation might even have been upgraded? The owl photo I shot above in full resolution and no compression is pin sharp - I can zoom in and see the detail of each feather!
The system as a whole is great. The dynamic range is superior to before. Smart HDR on the XS and XR family was a big leap but could occasionally look a little unnatural as HDR photography is wont to do. This new generation actually looks like how your eye sees it, especially colour-wise. Need to explore night mode's capabilities, now!
