I feel your pain. I'm on the line with support but they will not do anything else than read their scripted responses.
Cargolux is probably transporting the iPhones destined for Apple stores. Apple may have a different delivery method to their stores than UPS. They need to get to their destinations by Thursday so they can be sorted for the Friday pickups so need to leave earlier. Regular UPS from China is most likely for the ones UPS is delivering. They need to be stored someplace, so a warehouse in Zhengzhou is as good a place as any. Also first in the warehouse is usually last out so the early shipments will wait the longest.

I ordered from the Apple Store. The order confirmation e-mail is stamped “September 17, 2021 at 8:10 AM”.
I placed the order at apple.com and I received the confirmation at 8:03 eastern

No departure scan yet for me, 6:05 crew.

This sounds like what is happening.
It sounds like the problem might be with the form of payment he used. Usually, the only way this happens is if Apple can’t secure payment.
Still stuck with just arrival in ZZ, though mine was Monday 9/20 rather than Sunday 9/19. Still no complete tracking number, and Village Drapes shows me only what I thought were the last 4 digits of my tracking number. But someone else posted a screenshot with the same 4 digits, so maybe that number was just assigned to the whole pallet? Anyway, still showing 9/24 delivery but it would be nice to see some movement.
Nope, I wrote to them yesterday and they said everything is ok.
I called them just now and they said everything is ok, but they will not be delivering it on the 24. Without explanation.
I don’t understand it either, some people are seeing their date moved earlier.

In the exact same boat. Naturally my mom's iPhone Mini that I ordered after my Pro Max is in anchorage already.
Unfortunately, I'm in Puerto Rico and there is no Apple Store here.
I can try going to the at&t store but I don't think they will have any stock. They never do.

I have one ordered for delivery, and one for in-store pick up. If the delivery is delayed then I at least have a back up to play with the one I pick up from the Apple Store.
Me.Looks like Apple oversold on expected stock and you were one of the unlucky ones that fell off the end when Apple couldn't make enough of the option you selected. They aren't going to admit to that, it is something airlines do and the bumped passengers do tend to get pissed. They should offer some consideration for not making their commitment.
