Here is what I did. I have all my email addresses set up in mail app on phone and mac. I have my gmail, my own domain, and my college email forwarded to mobileme. I have on each of the email settings set them to archive the emails forwarded to them so I do not receive an email in the specific email as well as mobile me.
When replying to an email forwarded to mobile me on your phone just click the "from" field and a pop up scroll wheel will let you choose other outgoing servers that are on your fun like gmail or a college email. It works great!
