What happens if you tell it 75 minutes?Ever since I updated to watchos 27, the word "and" doesn't get understood now. I'll say "set alarm hour and fifteen minutes from now" and it'll literally spell out what I said, but it'll only do it for 15 minutes, or "one minute and 20 seconds" gets interpreted as 20 seconds. Really bad

It doesn't. I updated both my iPhone and Watch to Developer 4 Beta lsat night and did a test 1 mile walk this morning (ran yesterday on "old" Public 1 Beta). Still no Maps, so I guess I'm going to use Strava App for now until Apple gets it together. Did send Feedback a few days ago and update this morning stating it was still a problem.Do we know if beta 4 fixes the missing maps in the workout app?

Just to add it seems to show all Outdoor Workout data including calculating your VO2 Max. So I suspect it MUST be using GPS data but just not rendering the Maps.
This was my first Walk on 27 Beta and if it didn't KNOW it was Outdoors with GPS it wouldn't be able to give me a Pace yet since it would need a GPS Walk to calibrate first.😉
