Triple tap: triggers a shortcut that toggles the flashlight!! Total game changer, it’s always been such a pain to use the flashlight and now more than ever because they added stuff to the Control Center so you have to scroll way down. Do it!

I have a shortcut for setting noise cancellation and transparency and the back tap points to that shortcut.
It's set to launch safeentry, which is an app Singapore is using to help in contact tracing during the pandemic. Though I find double-tap either doesn't launch it reliably enough, or I accidentally activate it when I don't mean to. And now that the app also has a widget for iOS 14, launching it is convenient enough that I will probably deactivate it.
Triple tap: Flashlight (I work construction and often have gloves on. So this makes turning my flashlight on hassle free.)

I had double tap set to launch OK Google with Google Assistant, but disabled it completely today as it was activating by accident all the time.
Triple tap set to Undo for text operations. I mess up terribly sometimes with text selections and just find it so awkward to have to shake the phone, it really breaks my stride if I'm writing down something important and more often than not it also makes me do even more erroneous edits. Very handy to just triple tap instead.

Where's the best part of the back to tap to invoke it?
I think CC with double tap could be useful! since I always found top right pull down a bit awkward

Possibly because it's not all that doable with one hand normally, while the back tap provides that ability.

Not only is screenshot not normally possible with one hand, it demands precise timing and actually remembering which Vol button to press.

Double - Shazam shortcut
Triple - goodnight shortcut (shuts off all lights in home, activates motion automation for lights, ensures garage is closed).

On my XS with a Rhinoshield case (it has a very thin back) I tried it for all of five minutes before disabling it. Incredibly unreliable and it would only fire once out of every five times or so.
